We baked these delicious breakfast bars last week and are in love! Courtesy of The Lean Green Bean, www.theleangreanbean.com. They are super easy to make, are super tasty and pretty healthy to boot. We made several modifications, used almond butter instead of peanut butter, used a mashed banana, half the amount of honey and frozen blueberries instead of craisins. The quinoa and nut butter make these bars high in protein. These bars are dense and will keep you feeling full all morning.
Instructions
- 1 c whole wheat flour (or chickpea flour to make GF)
- 2 c cooked quinoa
- 2 c oats
- ⅔ c nuts, chopped (we used pumpkin seeds and almonds)
- 1 tsp cinnamon
- 1 tsp baking soda
- 2 Tbsp chia seeds
- ⅔ c peanut butter (we used almond butter)
- ½ c honey (we used 1/4 cup)
- 2 egg
- ⅔ c applesauce (or mashed banana) (we used a mashed banana)
- 1tsp vanilla
- ⅔ c craisins (we used 1 and 1/2 cup frozen blueberries)
- ½ c chocolate chips (optional)
Instructions
- Combine applesauce, vanilla, eggs, peanut butter and honey in a small bowl and mix well.
- Add the remaining ingredients and stir until just mixed.
- Spoon into a greased 9×13 pan and bake at 375 for 20 min or until golden brown.
- Let cool and cut into bars.
- Store in the refrigerator.
